Vegan Dark Chocolate Pudding

Mum Alexandria shares these candid cooking moments of her adorable 3 boys Soren, Sebastian & Stuart as they get together & make one of their favourite treats!

Alex: “We love putting up this recipe together. Our middle son is gluten and caesin free & this is a great alternative for milk pudding.“

Ingredients:
? 1 cup unsweetened almond milk
? 2 ripe avocados, peeled and pitted
? 1/3 cup plus 1 tablespoon unsweetened cacao powder
? 1/2 cup 2 tablespoons pure maple syrup
? 2 teaspoons vanilla extract
?Pinch of sea salt
? Berries, cacao nibs, chocolate quinoa crunchies, coconut whip cream, options for garnish.  

Directions:
1. Put the almond milk, avocados, cacao powder, maple syrup, vanilla extract, & salt in a blender and purée on high for 30 to 60 seconds until smooth and creamy. (You may need to stop and scrape down the sides with a spatula.)
2. Transfer the pudding to glasses, ramekins, or container to chill in the fridge for at least 3 hours.
3. To serve, garnish with the berries or other toppings or all!

This recipe is simple, easy & delicious, but we must add the 3 boys are more edible than the pudding itself ?.
